Detailed Journey from Milking to your Bilona Ghee
Milking & Butter Preparation at the Village Level
- Every family owns 2–3 local Badri cows, with usually one lactating at a time.
- 2–3 litres of milk is collected daily in each home.
- Milk is filtered, boiled, cooled, and turned into curd.
- Curd is churned using the traditional bilona method (wooden churner or hand blender).
- Each churning yields 200–300g of butter.
- Butter is collected in a steel container.
Butter Collection from Villages
- Butter is collected from 47 villages, involving 350+ families.
- Self-Help Groups (SHG) collectors gather butter in steel containers as per schedule.
- Collection happens weekly (4 times a month).
- About 100 kg of butter is gathered monthly.
Butter Handling & Storage at Processing Unit
Butter is sent to the processing unit from SHGs. To ensure the production of high-quality ghee, the following guidelines are followed for butter handling:
- Butter is weighed, with batch & SHG details recorded.
- Washed 2–3 times with potable water to remove curd or other impurities.
- 100 ml sample taken for lab testing.
- Cleaned butter is stored at -20°C in deep freezers, labeled with:a. Collection date
b. Storage date
c. Quantity
Ghee Production Process
- 1 kg of ghee requires 1.5–1.6 kg of butter.
- 35–65 kg batches are processed depending on demand.
- Butter is gently heated to 107–109°C until milk solids separate.
- Ghee is cooled down and filtered at 70°C using cotton mesh for clarity.
Packaging & Storage
- Packaged in glass jars.
- Store in a cool, dry place.
- Shelf life: 1 year.
